Sweet Peppers

Looking for something quick and easy? Ricotta and Roasted Pepper Tartines. Something slow and easy? Pepperonata, which is essentially Italian stewed onions, garlic, and peppers (feel free to skip the tomatoes if tomato season is over). It's good on sandwiches, with chicken, or roasted eggplant. Or, for something a little more involved and filling: this rich Eggplant, Pepper, Bechamel Gratin.

STORAGE: Store sweet peppers in an open bag in your fridge. They will keep for at least a week, if not longer.
